I'll make this as quick and simple as I can!
I am interested in a seller's rifle in New Mexico.
I am in Arizona.
We have been discussing a possible trade, but, we both want to do hands on.
I want to take my rifle to New Mexico, or, have him come to Arizona with his,... and do a private trade transaction?
Question,... legal ? or, not ?

If you're going to take it to New Mexico then the laws of NM would seem be more relevant. After reading the info below I'd recommend calling an FFL/dealer/gun store in New Mexico and asking how it's done, can't be the first time someone wanted to do this. Probably easier to go there, comply with the NM transfer laws since they are more restrictive and everybody's safer. NM may also have specific laws about out-of-state buyers.

Sales of a firearm without a background check is unlawful in New Mexico. In 2019, New Mexico passed a law that generally requires firearms sales to be subject to a background check. The law requires private sales to be processed through a licensed dealer who is required to conduct a background check on buyers under federal law.
As far as him coming to AZ to do the transfer:
On this site, down in the "Dealer Sales" section it's talking about someone from outside of Arizona buying a long gun in Arizona from a dealer. I'd say the last two bullets make him coming to AZ problematic.

Non-residents can purchase firearms if:
- The firearm is legal in the buyer's home state;
- The transaction must be legal in the buyer's home state; <---might be an issue if he came to AZ
- Immediate possession of long guns is allowed if legal in buyer's home state; <---is immediate possession OK in NM?
